Breakfast is often the least considered meal of the day. We reach for the same thing we ate yesterday out of habit.
These choices are often not as nutritious as they could be, perhaps a bowl of cereal with about as much going for it as the box it’s packed in, maybe toast with Jam or heaven forbid just a cup of coffee.
If you are like me you need breakfast to be quick and easy. I also like it to pack a nutrient dense punch to get everyone through to lunchtime. This is easier than you think!
Include protein such as eggs, nuts or meat, good fats in the form of butter, avocado or nuts, slow release carbs from whole grains and then something fresh such as fruit or vegetables for added vitamins and antioxidants. It makes you feel good if you can included at least one or two servings of vegetables first thing, one less to think about later in the day.
For days when you are really short on time
Top toast, an english muffin or a crumpet with your choice of the following:
Ricotta and tomato – add dulse flakes, a dehydrated seaweed, for extra goodness, including iodine which is vital for brain development.
Tinned Fish like tuna, salmon, mackerel or kippers – great omega 3 fats and protein.
Nut butter and banana – for protein, healthy fats, fiber and potassium.
Avocado with lots of lemon juice, salt and pepper – great fats and delicious.
Make mornings really easy by doing the prep for breakfast while you clean up from dinner.
Chia Pudding – mix 1/4 cup chia seeds with 1 1/2 cups of milk ( cows, almond milk, coconut milk ,whatever you like), 1 tablespoon maple syrup or honey and stir. Place in the fridge overnight, these magical seeds absorb up to 10 times their weight in water so thin in the morning if required. This is a basic recipe, add cocoa powder, frozen fruit, or blueberries for an antioxidant hit.
Overnight Oats – oats are a good source of fiber and have been shown to lower cholesterol levels. Plus they are seriously affordable. To make use 1/3 cup greek yoghurt, 1/3 cup milk of choice, 1/3 cup oats, 1 tsp cinnamon, 1 tsp ground ginger, 1 tsp maple syrup or honey – mix well and refrigerate overnight. Top with fresh fruit and chopped nuts in morning.

Any meat or vegetables left over– this takes a bit of getting used, but once you get your head around it, this may just be the perfect breakfast.
Stewed fruit topped with full fat yoghurt and chopped nuts and seeds.
Breakfast in 10
Eggs any way you like – we like them scrambled or boiled in our house and served on buttery sour dough.
Grain free banana pancakes
Eggs poached in chicken broth – this is my daughter’s favourite breakfast, served with soba noodles
Corn and vegetable Fritters – make extra for dinner and freeze left overs then just heat
Whole oat porridge – soak the oats in water overnight to reduce cooking time
Homemade baked beans – make a batch at the weekend and just heat and eat.
Antipasto style plate – include meat, olives, fruit, nuts, pate, cheese and crackers
Smoothie – blend together your milk of choice of milk, some frozen fruit, ground flaxseed and either 2 tbsp. of rolled oats or wheat germ with some ice and enjoy. Add yoghurt for a thicker consistency.
Smoked salmon, spinach and eggs
Scramble eggs, cook some bacon, add lettuce, fresh tomatoes and sour cream all wrapped in a wrap or mountain bread and voila – breakfast burrito, the perfect eat on the run breakfast
Toast a wholegrain English muffin, top with sliced ham, tomato and grated cheese for a breakfast pizza.

Great post! Two things I will try is homemade baked beans (my kids love baked beans and even though I buy organic/ no sugar and low salt) let’s face it, it’s still from a tim so they only get it 1-2 a year. If I can crack a homemade version that would be awesome.
