Warm Chickpea salad with Salmon

This salad is ready in 5 minutes and can be made form whatever is in your pantry.  Don’t have chickpeas use kidney beans or white beans instead.  No Salmon, use Tuna.  Toss through whatever greens you have, we also like it with iceberg and cucumber.

Warm Chickpea Salad with Salmon

Serves 2

1 large can red salmon (400g ), drained
1 can chickpeas (400g ), drained
1 tablespoon apple cider vinegar or lemon juice
2 – 3 tablespoon olive oil
2 handfuls of rocket
2 tsp salted capers
2 tomatoes diced

1. Heat a little olive oil in a frying pan.
2. Add chickpeas and stir fry for a minute or so to warm them. Add salmon and break up with a fork.
3. Meanwhile, combine vinegar or lemon juice in a bowl with 2-3 tablespoons extra virgin olive oil. Season.
4. Toss hot salmon and chickpeas into the dressing.
5. Add rocket, capers and tomatoes and serve.

Variation – top with marinated feta just prior to serving.
