Pico de Gallo (Mexican salsa)

I love salsa this fresh and slightly spicy with corn chip, on top of fish or tossed through steamed green beans for a warm salad. knife-654362_1920

3 large ripe tomatoes, diced

1/2 medium sized red onion, diced

3 TBSP coriander leaves finely sliced

juice of 2 limes

1 clove garlic, minced

1 tsp of salt

2 jalapenos, sliced

Optional ingredients -not traditional but good, cucumber and capsicum for crunch

  1. Wash tomatoes and coriander.
  2.  Dice tomatoes and onions and place in a bowl with the salt, allow to sit for 10 minutes then drain excess liquid.
  3. Add coriander, garlic and jalapenos and mix.
  4. Add the lime juice and serve.
