Chocolate Treats
This Easter I will be making these fantastic chocolate squares. Packed with good fats from the coconut oil, magnesium, iron, manganese and antioxidants from the Cocoa powder, and lots of gut healing goodness from the Gelatin. So no guilt here!
(Original recipe by FOOD Savy) I have changed slightly as the original was sort of a marshmallow texture and I like a more chewy texture. 
3 Tbsp powdered Gelatin (I use Great lakes as it has health benefits but use whatever you can get)
1/2 cup cold water
1/2 cup cocoa powder
1/2 cup coconut oil
2/3 cup honey
1/3 cup maple syrup
1 Tbsp Vanilla Extract
1 cup boiling water
In a pot on the stove mix the coconut oil, honey, maple syrup and vanilla. Bring to the boil over a very gentle heat and allow to simmer for 5 minutes be careful not to let it catch on the bottom of the pot. Place the cold water and gelatine in a blender and allow to “bloom” for 5 minutes. Mix together the cocoa powder and boiling water and add to the gelatine mixture, then add the honey mixture. Blend until combined. Pour the mixture into tin lined with baking paper or into individual moulds and refrigerate until set. I sometime freeze half as these are also great frozen.
You can mix the ingredients with a stick blender in a large boil if you don’t have a blender.
